She was born in 1911 and raised in Utah. Her father William George van der Sluys was born in England in 1865. I was able to trace the family history in England back another three generations to one family of origin who appeared to have emigrated from Holland. I didn’t know how or where or when however. I will list the male line for simplicity:

William George (born 1865) to James Richards van der Sluys
James Richards (born 1837) to George
George (born 1790) to Lambertus
There may be another Lambertus born to a Lambertus in here, but no proof yet
Lambertus (born 1727) to Jan who was a wine merchant and Amsterdam Theater and Bar manager
Jan (born 1690) to Lambertus (born 1677) who was a goldsmith, Amsterdam Theater manager
and so on

I am not sure if Lambertus was the son of the Lambertus (b. 1727) I am about to discuss or the man himself. If this is the Lambertus born in Amsterdam he would have had a second family very late in life. But given that he died about 1800 and was called a dancing master it could be the same Lambertus.

Several van der Sluys descendants were looking for the answer to the same question: How did a Dutch man come to be in England? The answer came from an Australian angel. Last year I was contacted by a man in Australia named Leslie van der Sluys. He is a lithographer and had been corresponding with a colleague in Holland. The colleague noted the Dutch surname and asked Leslie if he would like him to do a bit of research in the Amsterdam archives for the van der Sluys name. Here is the story that was uncovered:

The van der Sluys family were prominent members of the Amsterdam theater scene in the 1600‘s and 1700's.There are numerous mentions of the family in books on the theater and their connections to other theater people. For generations they married other theater people and their kids went on the stage as early as possible. They sent their children to Paris to be trained with the best dancers and singers. Lambertus Vandersluys and his wife Alida Crull/Krul had three children Jan, Paulina, and Willemijna. Paulina went on to marry Jacob Backer and they owned property in Utrecht. Jan was my ancestor. He had four children with his first wife, Hendrina Duym. The Duym family were also noted actors and Hendrina’s parents, Isaac Duym and Lysbet Hendrie, took her three living children from their abusive father upon Hendrina’s death at the young age of 23. Her husband Jan went on to marry Maria Voster. The two fought bitterly. However, Maria bore Jan seven children. During all this upheaval Jan was managing the careers of two of his children from his first marriage, Lambertus and Alida. The children studied in Paris and when grown joined Jan at the theater in Amsterdam. To be the theater manager was coveted position and had been held by both Jan and his father Lambertus. In other words they had a life that would have been the envy of many and not to be taken for granted.

Jan and his second wife were fighting so much that he arranged another husband for her, to which she agreed. Maria Voster’s lawyer opposed the new marriage. The lawyer was causing such a problem that Jan sent a Swedish sea captain to coerce the lawyer into allowing the marriage. The lawyer and the sea captain got drunk and they started fighting. The sea captain killed the lawyer. He then dismembered the body and spread it around the city to conceal his crime. Eventually the whole sordid affair came to court and Jan was suspected of murder for hire. The captain confessed, taking full responsibility and exonerating Jan. The sentence imposed on the 82 year-old captain was to be drawn and quartered in a public square. Although Jan was not charged he did spend time in jail awaiting trial and at trial he was banned from the city of Amsterdam for life. He took his two protege children to London and they began appearing on the stage at Covent Garden in 1748, the same year Jan was banished.

After years of wondering how Lambertus van der Sluys came to be in England I finally had an answer. He joined his father in exile and remained in England thereafter. There is a great book about theater people in England which gives the rest of the story. A Biographical Dictionary of Actors and Actresses ... By Philip H. Highfill, Kalman A. Burnim, Edward A. Langhans. The book can be found on google books in it's entirety. Alida van der Sluys married Joseph Granier of a famous French theater family. They are listed in playbills and pay rosters in England, Ireland, and Scotland for the next few decades. Lambertus and Mrs. van der Sluys, probably his wife, are also on the bill in Dublin, Glasgow, London, and Hull, England. As far as I know Lambertus (or his son) ended up in Lostwithiel, Cornwall, England. That Lambertus was listed as a Dancing Master in a parish register, so the theater arts were passed down if it was his son and not the man himself.

Years later there was a story in the local Amsterdam newspaper about Jan living in Rotterdam in a house along the river with his own personal barge for traveling the country.Kathyhttp://www.blogger.com/profile/06510208186958591585noreply@blogger.com1tag:blogger.com,1999:blog-787207394690938779.post-57678699726228803192010-11-16T09:43:00.000-08:002020-06-27T08:59:00.217-07:00Maglehem, SwedenMaglehem is pronounced MAH gle hem, similar to Bethlehem.

My great great grandfather Jens Monson was raised in Olseröd, Kristianstad, Sweden. Although he lived in Olseröd I visited the nearby village of Maglehem, about two kilometers south. Jens first wife Hannah Swenson descended from many generations of Maglehem residents, although she was born elsewhere. Jens and Hannah married in the U.S. but both originated in Maglehem. Because of the timing of the trip I was not able to see both Maglehem and Olseröd and had to make a choice, I chose Maglehem. Maglehem literally means Big Home. A bit facetious maybe given that it currently has 160 residents and does not appear to have ever been much larger.

Maglehem was where the Monson family worshipped, attended school, and shopped. By bus the two villages are about 45 minutes south of the metropolis of Kristianstad and are still almost exactly as they would have been 130 years ago. There are no modern houses and the businesses are gone. The area once boasted numerous breweries and distilleries. Only a couple remain today, including the Absolut Vodka distillery in Åhus, about 20 kilometers north of Maglehem.

I spent many hours planning the logistics of my trip to Maglehem since it was a bit off the main rail line. I did not know it when making my plans that the day I picked for my expedition was a national holiday, All Saints Day. I settled myself on the highspeed train at 8:00 a.m. and as the train pulled away from the station the conductor announced the destination, Göteborg in Western Sweden. I was supposed to be on the train bound for Malmö in Southern Sweden. This little mistake would cost me three hours and I was certain that my plans for the day were ruined. I am meticulous and careful and I do not get on wrong trains. How this could have happened this day of all days was beyond belief. I could not have known then that it was the best thing that could have happened.

As I stepped off the bus on the side of the highway at 4:00 p.m. just as the sun was setting and waited for the bus to pass I turned to the only other passenger to disembark at the Maglehem stop and asked, "Do you live here?" As Bergitta and I made the 15 minute walk into town together I learned that this night was a special celebration unique to this part of Sweden, called the Festival of Lights. It did not really have to do with the holiday, All Saints Day, it had just developed a few years earlier as a competition among cities in Skåne (pronounced Skona) to see who could put on the best light display.

Next thing I knew I was having dinner at Kerstin's house, Bergitta's friend. We enjoyed homemade beetroot soup, some kind of berry drink, that the two of them could not translate into English, home-baked bread, and apple crumble for dessert. Kerstin told me the history of the area and the Festival. The townspeople put candles in their windows and the roads were lined with candles creating a beautiful spectacle. The most amazing thing though was the church was open and candlelit. I could not have asked for a more amazing experience. Kerstin told me the church is normally only open for Sunday services and if I had been there on any other Saturday of the year it would have been locked up and dark. I was able to touch the twelfth century baptismal font where many of my ancestors were baptized. I sat in the pews where they would have sat for Sunday services. The church was built in 1300 and last altered in 1640. It would have been largely as it had been when the family left Sweden in 1875.

If I had arrived in Maglehem three hours earlier I would have never known that a celebration was happening that night. I would have walked into town alone, photographed the locked church from the outside, and got back on the bus without knowing I had missed anything. There was no indication that a celebration was going to happen once darkness fell. After dark every resident in the town was out on the streets. On the walk into Maglehem from the bus at sunset we did not pass a single soul. I have to believe there was some sort of divine intervention keeping me from my carefully planned agenda.

As Kerstin, Bergitta and I walked over every inch of the village Kerstin relayed the history of nearly every building, she told me about the thatched roofs and how it is done in Sweden with crossed wooden beams holding down the thatch at the peak. She told me how important eels are in this part of the country and that most villages have an eel hut, a thatch roofed building dug down into the ground so that as you enter you step down below the soil line. Every year there are huge eel harvesting parties. For days the residents, mostly male, use handmade nets to harvest hundreds of eels. The community uses the eel huts to process the eels, eat heartily, and drink heavily until the eel season is over. I felt like I saw nearly every building in Maglehem including the school building which was used from 1846-1916. This is where the Monson children most likely would have attended school.

After walking from one end of the village to the other the three of us ended up at the firehouse where a band was playing traditional Swedish folk songs and there were Swedish hotdogs which I am told are an essential part of any Swedish celebration. We returned to Kerstin's house where we warmed up a bit before Bergitta and I caught the bus back to Kristianstad. Upon my return to the U.S. Kerstin sent me photos she had taken in Olseröd. Pictured are the beach front at Olseröd, a traditional Swedish house near Olseröd beach, and the thatched building is an eel hut with the tall posts used for the nets.
All the nighttime photos were taken with no flash and I have no idea how they turned out so bright. For example, I had no idea there was a painting above the altar in the church. It was dark enough that I could not see it. I was surprised to see it when I viewed the photos. I will be forever grateful to my generous hosts Kerstin Dahlberg and Bergitta.Kathyhttp://www.blogger.com/profile/06510208186958591585noreply@blogger.com2tag:blogger.com,1999:blog-787207394690938779.post-50898607817418427732010-05-21T13:13:00.000-07:002010-05-21T13:14:20.046-07:00An Accidental Mother Book Review The Accidental Mother by Rowan Coleman

I liked the message in this book. Sometimes you have to pay attention to the promptings and abandon your own agenda. I normally read books in a day or two, but this one I read on the plane to and from Japan, during downtime at the hotel, and I still did not finish it for a day or two after coming home. I found myself reading every word and savoring the story. Sometimes I cannot wait for what's on the next page. This story was more laid back and unfolded in a natural real life way. A possible, yet improbable story.

View all my reviews >>Kathyhttp://www.blogger.com/profile/06510208186958591585noreply@blogger.com0tag:blogger.com,1999:blog-787207394690938779.post-20848854449785469642008-07-20T17:15:00.000-07:002008-07-20T17:31:25.691-07:00Flaming GorgeHow do you sum up Flaming Gorge? So beautiful and rugged. We went camping and boating with a few other families. We toured the lake, went fishing and snorkeling. We sang songs around the campfire while Jerry played guitar. We read a book about poms which described them as, "robust and lively dogs". Django lived up to that reputation. He ran away at least once a week until I finally figured out he was climbing the fence. We thought he might like a friend and when he was two we adopted Chili a rescued dog. She walked in the house walked straight up to Django grabbed his scruff in her mouth and yanked straight down causing Django to flip over on his back. Chili was top dog from that day forward. That was the one and only time she pulled that stunt. Django was so passive he wouldn't even eat until Chili gave her consent. The two dogs never really played together or slept together. The only way you could tell they cared about each other is if Chili yelped Django would come to her rescue.

Last week Chili died of congestive heart failure and Django, a diabetic, refused all food for seven days and slipped into a diabetic coma today. These two dogs who lived together for thirteen years died a week apart, just like an old married couple. We'll see how the cat fares after the death of his best friend, Django.

There are a million funny stories about Chili, but the top photo sums up how bossy Chili could be. Notice how she has the cat shaking in his boots...not. She was also the kind of dog who would stay by your side if you were sick. During one illness I had Chili refused to leave my bedside to eat or go potty. When Jerry picked her up to carry her outside she bit him so hard he dropped her. Every day when Jerry kissed me goodbye she growled and yipped until he backed off. She followed me wherever I went in the house. Even with a broken leg she refused to remain immobile.

They both brought us a great deal of joy and heartache. Chili was hit by a car, injuring her back right leg. A kennel visit resulted in severe nerve damage to her front right leg. A stroke a couple of months ago weakened her two left legs. Poor dog had damage to all four legs in the end. I told Jerry that I never had a down day in the last fifteen years. No matter what went on out there, I would come home to pure love and adoration.Kathyhttp://www.blogger.com/profile/06510208186958591585noreply@blogger.com1tag:blogger.com,1999:blog-787207394690938779.post-61058201144579573852008-06-03T17:07:00.000-07:002008-06-03T17:20:12.173-07:00Yellowstone

I could post a dozen pictures of our trip to Yellowstone, but nothing can match seeing a grizzly in the wild. This was Jerry's first trip to Yellowstone. I went a few times when I was a kid and it looks nothing like I remember. The 1988 fire was HUGE!!!

We saw every animal imaginable and had some great picnics in the snow. Our mantra became, "Where's the bears?" We did not see a single one...until...we were heading home and just before we hit the main road after checking out at Grant's Village we saw a couple standing on the side of the road. We asked, "What do you see?" Grizzly was the answer.

Holy Cow! We stood and watched the bear graze all over the hillside for a half hour before it disappeared over a ridge. We pulled onto the main road and I wondered aloud if the bear might be nearby because of the position of the ridge. We pulled the car over and ducked into the bushes. There 25 yards in front of me was the bear.
Kathyhttp://www.blogger.com/profile/06510208186958591585noreply@blogger.com0tag:blogger.com,1999:blog-787207394690938779.post-90423753471416240962008-06-03T17:01:00.000-07:002008-06-03T17:07:49.398-07:00Oh my gosh!!!Has it really been three months since I posted? There is a large farm with horse stables, cottages, and a variety of other enterprises on the premises including a state of the art recording studio. All set in the tiny village of Addlestone in the Surrey countryside. I spent many happy hours curled up on the couch in the corner of the studio listening to great music being created. Everybody is so professional it is amazing to watch and listen. In fact the sax player was a bit bored and so offered to play bass. Normally the keyboard player "kicks bass" or plays a bass line with his left hand. John Goforth did a tremendous job as bass player. He sounded like that was his instrument.

There were some magical moments in the studio and some tedium too.
All in all a memorable couple of days.

Ponies in the meadow at Hatch Farm Studios

England is so lush. There is something magical about England for us. First of all Jerry's main musical influences in the sixties came from the British Invasion. For Jerry England is mecca. For me it is the homeland of most of my ancestors. I relish being able to walk in the footsteps of my ancestors. This trip I visited the tiny village of Daventry in Northamptonshire. I found the street where my ancestors lived, but the houses had been rebuilt in the 1890's. I tramped through the church graveyard. The ancient Norman church made of ironstone which has the color of rusted metal is like nothing I have seen before.
<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEguFRfJw5a1Zm3lHQ_f62BdzQ3JuyMBeYza9MRIgdVmDSHehdEqsrX8rwP4ow6mfaoSqpyNkcgmOnU28AZHp5-pQ0Ccz3cpF2PLfzILvWboZiN9fZPpbt31DWOX5fbg41ZiiIerlscknvk/s200/DSC02622.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5164711214813161010" />
<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhry4evsvu7ltuSD-XVAn7s_uHSDVNRlfOdmds1q0sRbC6blGdCe7Phyq6vlWOTquRYAqLZcwrNId36EndAApk9QPrkL6xzoAo-Q9jE5fP_JlsuYTuL8Yk439B9xSZORIRtQf9yiwvintw/s200/DSC02618.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5164711274942703170" />
<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgEUhGsfRkLUXFDkHHXNZ1wOlAdwktcCJK36ly3pAlf2SMu40-A2BS0Lqgdy8hMxGyDCx9EFb6-iC6XI8S9VV-BLSxIeyJ0UG1D2GSrw0qMFOp58WFXJ_a8uWn712uMX_jTtyfX13Nobhc/s200/DSC02615.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5164711322187343442" />
<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEj8bl1qUXQAr86rpw6f4noom3rCRVJHSLyXePNP1BFDnQx9U_GDSNqxI_LexbZkBOgYfLqnr1PZMnA5ZD8Q0ETwb3pqn5tArRzc3sIgdQxIfz7evVw_RbtsTcPQjuvCnz4WttNRZ0x0mpQ/s200/DSC02612.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5164711408086689378" />Kathyhttp://www.blogger.com/profile/06510208186958591585noreply@blogger.com1tag:blogger.com,1999:blog-787207394690938779.post-90235432883594129562007-12-20T16:18:00.000-08:002007-12-20T16:43:51.910-08:00The wonders of natureAs I was driving home under dark low clouds I could see a highlight of sun south of my house. I kept driving another ten miles and as I topped the crest of a hill the spectacle before me cannot be described the sun was so brilliant that it was difficult to see the road. I know there must be ways to balance the contrast, but this is exactly how bright the sun and how dark the road.

<img style="display:block; I walked out on the jetty expecting my dogs to follow me. When I got near the end one dog started barking. I turned to find the other dog had followed the path of least resistance, walking on the ice. I had to pick up the other dog to keep him from trying to rescue his sister.

Poor little doggie she walked around several of the ice islands not daring to cross open waters. the whole thing was frozen, but it did look like floating icebergs.

Kathyhttp://www.blogger.com/profile/06510208186958591585noreply@blogger.com0tag:blogger.com,1999:blog-787207394690938779.post-28027618162079291382007-12-16T21:59:00.000-08:002007-12-16T22:36:39.005-08:00Portuguese AlcatraSaturday Night Jerry and I had a fantastic Christmas party. Thanks to everyone brave enough share their talents. We ended up having an impromptu little concert since many of Jerry's students were in attendance.

I made a Portuguese specialty for the first time. Jerry's cousin made this for family parties and every time I ate the dish it was so delicious. This was my first attempt and it came out just like cousin Cecilia's.

I did not take a photo, because I loathe looking at pictures of beef, cooked or not.

ALCATRA

(pronounced Al-COT-ra)

One clay pot
I use a Romertopf, but Ikea has one for only $25

Beef roast of any size that will fit your pot.
Bacon
Onion
Red wine

These directions are for a two pound roast. Increase onion and bacon for every two pounds more.

Season roast with garlic salt and powdered steak seasoning of your choice
marinate in refrigerator overnight in ziploc bag
chop 4 slices (1/3 pound) of bacon into small pieces and cook until crispy and fat is rendered
Remove bacon from drippings and add roast.
Sear all sides of roast in hot bacon drippings
Remove roast and then saute one thinly sliced onion in bacon drippings

Soak clay pot in cold water for 30+ minutes
place beef, onion, and bacon in pot
Cover completely with half water-half wine
place uncovered pot in cold oven
set oven temperature for 200º
Top up wine and water mixture whenever the roast becomes exposed, about every 6 hours.

Cook for 3-4 days

At the end of that time the beef will be very tender and stringy.
Remove roast and use a fork to shred or cut into slices
Serve with the pan juicesKathyhttp://www.blogger.com/profile/06510208186958591585noreply@blogger.com0tag:blogger.com,1999:blog-787207394690938779.post-86031765023032268902007-12-09T17:44:00.000-08:002007-12-10T21:47:56.361-08:00Mom's FuneralMany people called Lois Cortez "Mom". Although she passed away in August 2007 I never did post the pictures I created. I believe this is a Marin Academy gig. The music teacher at MA is playing guitar, not Jerry. This really showcases the potential Lara displays.

http://video.google.com/videoplay?docid=-2090123228484708761&pr=goog-slKathyhttp://www.blogger.com/profile/06510208186958591585noreply@blogger.com1tag:blogger.com,1999:blog-787207394690938779.post-72483031484994956322007-12-04T22:24:00.001-08:002007-12-10T21:50:02.777-08:00Lara Johnston sings "Let the Good Times Roll"

Check out the cool ending! If you use inkjet allow the ink to dry over night. Print on the rougher side of the transparency otherwise the ink flakes off the shiny side.

Clear glass globes (Craft stores have the best prices)

tweezers

On the show they used actual images of stained glass rose windows. My twist was to use family photos. Start with fairly large glass globes. It must have a removable top where the hanger is inserted into an opening with a metal cap. Buy the globes first. Take a piece of white paper and estimate the circumference of the glass globe. Roll the paper up into a tube shape. Insert it in the opening at the top of the ornament and estimate how much bigger or smaller the circumference needs to be. It will take several tries, but it is worth the effort. Once you have the size nailed down the circle cutter will give you the exact same size every time. Another tip is to place the circle cutter on the side of the transparency that does not have the ink. There will be less ink rubbed off. I chose to print everything in a sepia tone for consistency.

The basic idea is that you print an image, of any shape, on the transparency and cut it into a circle. Roll up the image and insert into the ornament. The transparency will pop open and be viewable from both sides. Use the tweezers to manipulate the image into place. Spray a light glue inside the ornament and swirl a small amount of fine glitter. Top it with a bow.

I chose large graphic images like headshots or individuals, instead of tiny detailed pictures like family groups. I chose iconic kind of images like a baby peeking out from under a blanket or grandpa with his fishing pole. I did not choose posed school or studio pictures and the like. You can see bold images from across the room. Years ago Look magazine took pictures of my grandparents and I used those photos for my mom's ornaments. She like them so much that she made duplicates for her sisters the next year. My aunts were screaming with joy and crying when they opened their gifts.

Steps:

figure circumference using white paper

using your computer and white paper print several image sizes until you get the desired one

print the finalized image on the transparency (I try to squeeze several images onto one page)

cut out with circle cutter

roll the image and pop into ornament

manipulate with tweezers until straight

replace top and hanger

There is a fine balance if the image is a teeny bit too small the image will slide around within the ornament. A tiny bit too big and it will not unfurl all the way.Kathyhttp://www.blogger.com/profile/06510208186958591585noreply@blogger.com0tag:blogger.com,1999:blog-787207394690938779.post-74761241777990775722007-11-30T14:01:00.000-08:002007-11-30T13:28:21.234-08:00Sugar Cone TreesA variation on the chocolate covered pretzels. I saw a woman make Christmas tree shaped cakes using snowcone cups and an upside down foil roasting pan with holes cut in it to support the cups while they baked in the oven. Cute idea, but way too much work. So I thought about how I could create an edible forest without making cakes.

The solution is to use sugar cones. Dip and roll around in melted chocolate until coated. Embelish with silver dragees for the lights or ornament effect (unless you live in California where some lawyer made it so that dragees are illegal to sell). Silver is poisonous, if you eat five pounds of dragees.

At Cake Art (San Rafael) you can buy all sorts of little embellishments. Dye shredded coconut green with food coloring and make the forest floor by covering a piece of stiff cardboard with foil and scattering the coconut. Place the trees all over the tray to make a forest. I think this is a great idea for a kids' party. You could also use royal icing to stick larger objects to the tree, like a yellow gumball on top for a star. Just break off a bit of the tip to give it a resting place. You could also use icing to glue the "tree" onto a chocolate wafer cookie and fill the insides of the cone with something, like little nonpareils.Kathyhttp://www.blogger.com/profile/06510208186958591585noreply@blogger.com0tag:blogger.com,1999:blog-787207394690938779.post-70986533906519244932007-11-29T21:58:00.000-08:002007-11-30T00:03:21.672-08:00Great Camera
I was visiting the marina a few days ago and captured these painterly photos as the sun was setting. How hard could it be?" I went through many hours of trial and error after watching a show on the Food Network about a company that makes chocolate covered pretzels. I probably spent $200 and 40 hours before I finally figured out the best combination of ingredients and methods. I want to save you, my friends, hours of agony. Follow this formula. Do not deviate one iota and you will have professional looking and great tasting pretzels.

What you'll need:

Rold Gold regular, normal pretzel-shaped pretzels. I found the thick pretzels hard to bite into and they overwhelmed the chocolate flavor. About half the pretzels in each bag are broken so take that into account. To make 144 pretzels I needed about six bags. Only I didn't know that so it involved four separate trips to the store from Woodacre to San Anselmo (not a quick trip) because Safeway was the only store that had the right pretzels.

silicone parchment paper, not waxed paper

tongs

a glass or ceramic bowl

dipping chocolate (dark or white only, milk chocolate does not taste or look as good in this case). I get mine at Cake Art in San Rafael, CA

cookie sheet

Once I got everything sorted out the pretzels were much easier than baking cookies and I think they had a more dramatic effect or so I heard since I missed the cookie exchange at Heather's house last year.

OK now this is very important. DO NOT USE A DOUBLE BOILER. I wasted several bags of chocolates. The chocolate would turn white very quickly. I learned that you have to temper chocolate in a double boiler which involves a candy thermometer and turning the heat up and down at regular intervals.

Instead, use a glass or ceramic bowl only. Don't use all of the chocolate at once. Place enough in the bowl to create some depth for dipping. I melted the chocolate in stages to avoid ruining any more expensive chocolate. In between batches I thoroughly washed out the old chocolate and dried the bowl (water ruins chocolate).

Place the bowl of chocolate in the microwave for 30 seconds, remove and stir even if it doesn't look like its melted. Repeat this process for a maximum of three minutes. By then the chocolate should be melted. If not only go in 10 second intervals after the three minute mark to avoid burning the chocolate.

Place one pretzel at a time in the chocolate. Use the tongs to flip it. Once it is thoroughly coated lightly bang the tongs on the edge of the bowl to remove excess chocolate. Place pretzel on parchment. The chocolate should self heal if fluid enough. If it doesn't heal from the tong marks place it back in the microwave for a few seconds. Repeat until tray is full. Place tray in freezer for about ten minutes. If you want to add sprinkles do it while chocolate is soft. For real pizzazz melt a small amount of white chocolate in a small bowl. Place newspapers all over counter and floor. Dip a fork in the white chocolate and flick your wrist in a wide sweeping motion over the whole tray of pretzels to get a nice drizzle effect. Do this step only after the first layer is solid or has been frozen for at least ten minutes.

PRETZEL CANDY

Use the butter flavored waffle pretzels and dip them in white, red or green chocolate and coat them with red or green sprinkles and you will get something very close to candy. People were eating them like popcorn at my house last year. I can't even describe how delicious they were.

QUIZ: How many times did I use the word "chocolate"?Kathyhttp://www.blogger.com/profile/06510208186958591585noreply@blogger.com1tag:blogger.com,1999:blog-787207394690938779.post-63130036100786010152007-11-24T17:16:00.001-08:002007-11-24T17:43:15.217-08:00My first TurkeyOK I am really feeling like an idiot. I cooked the most beautiful turkey and I didn't take a picture. I followed Martha Stewart's cheesecloth covered turkey recipe. Oh my gosh, it was the best turkey I have ever had. Even the 2 and 3 year olds had seconds of turkey and whipped cream.

For all these years we have usually spent Thanksgiving with Jerry's brother. I have never had to cook before. I planned and planned and it all came out perfectly. Sometimes, well quite often really, when I cook dinner the entree is finished before the sides or vice versa. Many nights we finish dinner and I realize that I left some important dish in the refrigerator. In other words the kitchen is not my favorite place. So the fact that it all came together and most of the dishes were finished at the same time I attribute to a minor miracle.

So here was the menu:

Stuffed mushrooms which I modified from the previous menu listing. I browned one package Jimmy Dean Sausage with three green onions and a chanticleer pear (I think that's what it was called, it was a super sweet pear about the size and color of a plum) diced small. I then pureed 1/4 cup of cashews in the blender. Stirred the sausage, cream cheese, cashews, scallions and pear all together over low heat and then stuffed the mushrooms. Yummy!

I made the sweet potato puree described in an earlier post. Not a big hit, but it was interesting!

Mashed potatoes using steamed heavy cream instead of milk. So creamy!

Rhodes bake and serve rolls. Much better than I could do on my own.

Brussel sprouts halved and par boiled for eight minutes then sauteed with garlic in olive oil.

homemade cranberry and orange sauce. Tyler Florence's recipe. I would add more sugar than he suggests.

The stuffing and the turkey were the big hits of the day.

For the stuffing I made it up completely. I used four six ounce packages of Mrs. Cubbison's cornbread stuffing or two boxes. One package Jimmy Dean sage sausage browned with six thinly sliced leeks. Yes, you heard right I used six leeks. The flavor was amazing. A couple of people who said they never eat stuffing piled their plates with seconds. Drizzled with about one small can of chicken stock until just damp. I don't like soggy stuffing.

You can find Martha Stewart's turkey recipe several places online. This is the recipe I followed.
http://food.yahoo.com/recipes/martha-stewart/recipe1656/perfect-roast-turkey

Although I don't drink wine I cook with it all the time. In this case it paid off. This was the best turkey ever. One thing I added was fresh chopped sage to the butter I rubbed all over the skin before placing the cheesecloth. You could add any herb whose flavor you like. You could taste the sage in every bite. Delicious!Kathyhttp://www.blogger.com/profile/06510208186958591585noreply@blogger.com2tag:blogger.com,1999:blog-787207394690938779.post-11256529859763468122007-11-18T12:35:00.000-08:002007-11-18T12:37:59.152-08:00Whipped Sweet Potatoes
Whipped Sweet Potatoes
(Tyler Florences’ Ultimate)

I am not a sweet potato fan, but this recipe looked so yummy.

Roast several sweet potatoes that have been punctured with a fork at 375° for an hour. For the last twenty minutes add four bananas in their peels to the tray in the oven. Once potatoes are done (soft) remove peels, they should fall off easily. Mash in a bowl with bananas, a few tablespoons of honey and half a stick of butter. Spread in a casserole dish and top with flour, brown sugar and chopped pecan crumble. Bake at 375° until crumble begins to sizzle and brown (abt. 30 minutes).Kathyhttp://www.blogger.com/profile/06510208186958591585noreply@blogger.com2
